The new school year is officially in full swing! This teacher mama has already had a few rushed mornings trying to get 3 heads of hair done, teeth brushed, lunches packed, and all of us to school on time. I keep snacks in the car for when things get really crazy, but I try to always make sure my kids have something filling for breakfast that isn’t totally loaded with sugar. I have seen the effects of kids getting to school with no breakfast and I know that is one of the most important things to make happen for them in the morning. It sets the course for their entire day. If they start the day with an empty tummy, not only is their metabolism slow to start, causing them to be slow to think, but it is also growling by mid-morning, making it even harder for them to focus during what is often the most valuable instruction of the day.
I want to share the easiest way I have found to make sure this doesn’t happen to my kids. I have some picky eaters on my hands that would eat the same five foods for every meal if I let them, so it’s hard to find new and healthy foods that they will eat on the go without complaining. Chocolate chip protein pancakes have solved this problem! My go-to pancake mix is Kodiak Protein Power Cakes mix. You literally add water and chocolate chips or any fruit or nut you have on hand and cook them up! They love them and eat them with no syrup (car ride friendly). I make it one step easier by using a mini waffle maker so I can pour in some batter, close it, spend a minute packing lunches, and take the waffle out when the little light moves on and add more batter for the next one! I use one of the Dash Mini Waffle Makers. That one has a bunch of fun interchangeable plates and a storage case for them. One of them even does eggs!
